Melt sugar
2 cups warm water
2 tsp vegetable oil
1 teaspoon baking powder
1 teaspoon kosher salt
1/2 teaspoon baking soda
1 tsp lemon zest
1 tsp kosher salt for garnish
1/4 cup warm water
1 tsp coconut milk and a dash coconut flavoring powder to taste
1/4 cup coconut butter
1/4 teaspoon cinnamon
3 egg whites
1 teaspoon vanilla extract
3 cups shredded coconut, milled
1 cup cold-pressed cream
Pinch salt and freshly ground black pepper Instructions In a small mixing bowl cream all butter until well blended. Put in a bowl and let mixture cool down. In a food processor, combine almond, coconut and sugar together. Add hot butter to the butter and add water. Transfer to an even layer on a muffin tin lined with parchment paper. Transfer muffin to an quart measuring cup. Sprinkle almond and coconut milk over the top to dry. If you use water, use 1 teaspoon with a heavy bottomed spoon or add almond whipped cream.
