One of the leading food policy analysts at the Center Against Hunger in Washington, D.C., has a surprising idea: The more nutritious foods produced by farmers will come from the same corn, soybeans, wheat, and other nutritionally beneficial seeds that produce the best nutritional value.
The National Association for the Advancement of Colored People says that the world should "take in every new information about the nutritional content of foods and how we make them to satisfy hunger … and make it easier for people to eat them."
So, according to the nonprofit group, food scientists make food they believe will be "more nutritious and healthier than traditional grains as they age."
To produce this, farmers are now using a new method to convert starch, an ingredient of beans, into the nutrient they need for cooking.
The idea? The starch is extracted from the rice bean and then sold as a sort of "molecular fertilizer" to provide fresh, nourishing food. "Because we know that we'll be using food as a food resource in terms of nutrition, that will allow more nutritious, nutrient-enriched food to be made," said David S. Sousa, chairman of the association's advisory board.
